Heat a large deep pan with 1 tablespoon of oil.
In a bowl add the chicken pieces, turmeric powder, the ground dried ginger and shredded coconut as well as on tablespoon of vegetable oil. Stir well so that all the chicken pieces are coated. Leave to rest while you prepare the rest of the dish.
