Carrot methi sabzi

A delicious, spicy side dish to complement any Indian dish.

  • Carrots, chopped 4
  • Fresh fenugreek leaves (Methi) 1 Medium bunch
  • Olive oil 2 Tbsp
  • Onion, finely chopped 1
  • Green chilli, chopped 1
  • Ginger paste 1/2 Tsp
  • Garlic cloves, chopped 3
  • Turmeric powder 1/2 Tsp
  • Salt To taste
  • Coriander powder 1/2 Tbsp
  • Cumin powder 1/2 Tbsp
  • Lemon juice 3 Tbsp
  • Chapatti To serve


  1. Heat the oil in a pan and fry the onion until golden.

  2. Add the chopped green chilli along with the garlic and ginger paste then fry for a further minute.

  3. Chop the carrots and add along with the fenugreek and mix.
  4. Add the turmeric powder along with the salt. Continue to mix all of the ingredients and then cover and cook on a low heat until the carrots are cooked through.
  5. Add the coriander, cumin powder and lemon juice and mix well. Serve hot with chapatti bread.
