Onion, diced

Directions
Peel and chop the carrot, onion and potatoes.
Fry the onion, chilli, ginger and turmeric in hot oil. Add the curry powder and fry for a few more minutes.
Add the vegetable stock, carrots and potatoes then simmer for around 10 minutes.
Add the lentils and tomatoes then cook for another 10-15 minutes until the lentils are al denté. Season with salt and ground black pepper and serve garnished with parsley.
