Chicken yellow curry

This curry is easy to make, healthy and tastes fantastic.

Ingredients

  • Onion 2
  • Garlic cloves 4
  • Ginger 5 cm
  • Capsicum, yellow 2
  • Fresh coriander For garnish
  • Red chilli 2
  • Honey 1 Tsp
  • Turmeric powder 1 Tsp
  • Curry powder 2 Tsp
  • Chicken breast 600 grams
  • Olive oil Drizzle
  • Chickpeas 400 grams
  • Tinned tomatoes 1 Tin
  • Chapatti For serving
  • Lemon 1
  • Coconut milk 1 Can

Directions

  1. Peel and chop the onion, chilli, ginger, garlic and pepper.
  2. Fry the onion, garlic, ginger, chilli, and peppers in oil on medium heat for five minutes.
  3. Add the chicken, spices, lemon and honey and cook until browned. 
  4. Add the chopped tomatoes, chick peas and coconut milk then simmer for 15 minutes. 
  5. Serve hot with chapatti bread and garnish with fresh coriander leaves.
