Curried fish stew

Curried fish stew with tomatoes, prawns and fish.

Ingredients

  • Spring onion 6
  • Red chilli 1
  • Olive oil 1 Tbsp
  • Black mustard seeds 1 Tsp
  • Ground Turmeric 1 Tsp
  • Dried chilli 1/2 Tsp
  • Cumin seeds 1/2 Tsp
  • Fennel seeds 1/2 Tsp
  • Prawns 500 grams
  • Tinned tomatoes 1 Tin
  • Coconut milk 400 grams
  • White fish 300 grams
  • Ginger 5 cm
  • Lemon 1

Directions

  1. Finely slice the chillies and spring onions and add into a shallow pan on medium heat along with oil and all the spices. Fry for five minutes until lightly browned.
  2. Add the white fish, coconut milk and tomatoes and leave to simmer for 15 minutes.
  3. Add the prawns and simmer for a further five minutes.
  4. Serve hot with your choice of bread or rice.
