Peel and cube the sweet potato then carefully add to a saucepan of boiling water. Simmer for 15-20 minutes then drain the water, mash the potatoes and set to one side to cool.
Heat one tablespoon of olive oil in non-stick frying pan over medium heat. Add the onion and garlic and cook for 5-6 minutes, until soft. Set aside to cool.
Divide into four round balls and flaten to make burget patty.
Warm the burgers under the grill, in the oven or fry for a few minutes on each side, then serve in a toasted bun with your choice of salad and sauce.
