Directions
To make the dough - Add the flour, sugar and salt in a medium bowl and mix in the butter bit by bit until all the ingredients are combined. Add the egg and stir into the dough mixture using a fork or hands. If the dough becomes dry, just add a sprinkle of water. When mixed, wrap the dough in cling film and refrigerate for one hour.
To make the filling - Peel and core the apples then chop into four wedges, add to a medium bowl with the sugar and lemon juice and mix.
In a saucepan melt the butter over a medium heat, add the apple mixture and cook for 2-3 minutes, then place a cover on top, reduce the heat and cook for a further 6-8 minutes. Add the spices to the pan, stir well, remove from the heat and allow to cool.
Grease or line your baking dish then take the dough from the fridge and roll out on a floured surface. Make two circles, ensuring one is big enough to cover the top of the baking dish, and the other is large enough to cover the bottom and sides of the baking dish along with 1/2 inch excess to going over the sides of the dish.
Line the baking tray with the large crust and brush the edges with the beaten egg. Pour the apple filling into the pie and even the mixture out then add the top layer of dough over the top and seal the edges. Brush the surface of the pie with the egg and sprinkle with sugar.
Pierce the top of the pie a few times to allow the steam to escape during baking then place in the oven for 50-60 minutes, or until golden brown.
