Directions
- Heat the oil in a large frying pan, add the onion, paprika, thyme, parsley and rice and fry for 1-2 minutes consistently stirring.
- Add the tomatoes, stock and seasoning then cook for 15 minutes, stirring often.
- Stir in the seafood and simmer for five minutes, squeeze the lemon over it. Serve with lemon wedges and sprinkle with parsley.
