- In a bowl start with 100g Natco gram flour and mix in 1/2 tsp turmeric, 1/2 tsp ground black pepper, 1tsp Maldon salt flakes and 1tsp ajwain/carom seeds.
- Adding a little water at a time, bring together into a stiff dough, using more flour if necessary.
- Divide into 8 small pieces and roll into discs - generously flour your board when rolling to avoid sticking.
- Heat oil (I used sunflower) for deep frying in a deep based pan up to 200 celsius.
- Fry each disc one at a time, waiting for it to bubble up on one side before flipping. Each Puri takes about 1-2 minutes.
- Enjoy with a cup of Natco Spiced Tea ☕️
